Could you guys do a post on home-kitchen clarification? Specifically, which fruit juices can be clarified at home without heating and how do you go about it? I seem to remember reading on another blog an allusion to clarifying grapefruit by adding agar or gelatin, freezing, and straining, but no details were provided. It will be a while before I have my own centrifuge to play with.

That's amazing... you think you could infuse that with serrano or other type of chiles using the rotovap and still have a crystal clear liquid?

JK- Have you tried that volcano lime stuff. Does it taste good or like old lime. We stored out spin gel clarified lime overnight and it tasted like day old lime juice (ie bad).
